Bang bang salmon bowls tonight were sooo good. Honestly, I probably didn’t need the bang bang sauce, the salmon was great without it!

Red lentil curry with broccoli and flat bread. There’ll be some marinated oven roasted chicken too. Sort of tandoori style? It’s bright red at any rate. I was responsible for the bread and curry so not sure about the chicken details.

I just love roasting veggies this time of year. Today we have yellow beet (peeled), red beet (skin on) and parsnips (skin on). They’re tossed with rapeseed oil and black pepper. The trick is to prep everything but the red beet, toss it with oil and seasoning in a bowl, place it in the dish, and then toss the beet in the used bowl.

I mean it’s still tasty if it’s all mixed together, but it will all be pink.

I didn’t salt the veggies at all, but we had a sauce made from yoghurt and feta cheese so I didn’t miss it.

We have a Halal Mediterranean fast casual food chain here called Juicy Platters. I am obsessed with their spicy chickpeas. I just tried to recreate them at home using a variety of hot sauces, garlic, olive oil, and tomato paste. It was sooo good! These are the leftovers because I was too excited to try it! I served over salad with home made white sauce. Yum!!

I’m so excited about this. I will make them all the time!

I didn’t really measure anything so no real recipe, but here are some more details if it’s helpful. I doubt I’ll make them the same twice.

I used about a half can of chickpeas, a quick tip of the bottle of olive oil, several generous shakes of hot mango sauce (love), a circular squirt of sriracha, a pressed clove of garlic, and a more generous than I mean squirt of sun dried tomato paste, lol. I did roast them in the air fryer for about 8 mins at 350 just to heat them through.

I made the oddest must-go soup today to use up leftovers. Tasty but my tummy doth protest.

Obsessed. Spicy chickpeas for tacos tonight. I added a bit of taco seasoning to the mix and gave them a little mush.

Nom! Double shells?

Tonight I sautéed a whole pint of button mushrooms, marinated firm tofu, baby spinach, & brown rice served with garden salad. No pics, gobbled up!

Yeah we like to do hard and soft shells with refried beans or cheese in between. It helps keep the hard shell from crumbling all over the place. I owe this idea to my mom who totally stole it from Taco Bell. :laughing:

I make double decker tacos too! I love crunchy shells and the soft shells mostly keeps the mess contained.

It’s going to be really cold here this weekend so I’ve got lentil loaf and roasted potatoes in the oven, will do pan roasted Brussel sprouts to go with, and will make three bean chili tomorrow. Also planning to do instant pot steel cut oats this weekend. Bring on the cold weather food!
