Yeah. I tried one again this morning, before heading to the pool for my workout. I thought ā€˜They couldnā€™tn be as bad as you remember. Just power through.ā€™ I got through half of one, and it was a struggles. So then ended up in the trash today. I hate wasting food, but they were just sooooo bad. And Iā€™m a person who always alters recipes to be a little more healthy. Swapping out some oil for apple sauce, some of the AP flour for whole wheat, cutting back the sugar called for. None of that bothers me at all. Not sure why these were so flippinā€™ terrible. LOL!

Class or Challenge Title: Iron Chef Ostara Cook the Rainbow Challenge - July: Salad or Soup

**Brief Description:**This is one of my favorite Summer salads! I made it for our familyā€™s Independence Day get-together. I do mix up the recipe just a little, so Iā€™ll post my typical ingredients list, depending on whatā€™s available at the grocery store. I left out the jalepeno this time around, and used yellow bell peppers instead of red/orange.

Dressing:

  • 1/2 cup EVOO
  • 1/3 cup white wine vinegar
  • 1 tbsp lime juice
  • 1/4 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 cup sugar
  • 1 tsp dried cilantro

Veggies:

  • 1 avocado, diced
  • 2 cans black beans, rinsed
  • 1 can sweet corn, drained
  • 2 or 3 roma tomatoes, deseeded and diced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 red onion, diced
  • 1 jalepeno pepper, minced

Brief Description: I plan to make these Hufflepuff mittens for myself! They are knit with fingering weight wool, and have a lot of colorwork, so it will not be a quick project, but they look amazing, and I hope I can do them justice!

Hereā€™s the pattern.

I will be knitting them in Stroll fingering weight yarn from Knit Picks (dandelion and black.)

Brief Description: This rosary is for my 5-year old (he destroyed the last one because he didnā€™t like the color, despite choosing the beads himself). He wanted pink, so he got it. Dozens of tiny, bright pink orbs should make him happy. Still, Iā€™m going to put it up for him until he actually knows how to use it properly.

Oh thank you! I guess Iā€™ll keep the Muggle Studies afghan since Iā€™m still working on that, and Iā€™ll keep the mitts, since Iā€™m working on those. The book nook can go. I still plan to make it, but I havenā€™t done much yet. Maybe I can add it after I finish one of the others. :slight_smile:

Project Name: Star Spangled Quilt (of Valor)
House: Slytherin
Brief Description: A friend of mine is a combat veteran (Marine), and I want to make a Quilt of Valor for him. His wife helped me choose the pattern, ā€œStar Spangledā€ by Brick Cottage Quilts. Itā€™s based on the 15-star/15-stripe flag that inspired ā€œThe Star Spangled Bannerā€ by Francis Scott Key. The stars are paper-pieced - a piecing technique that I have never tried. I am currently working on a quilt for my DS2, but this will be my next quilting project.

Iā€™ve started obsessing planning my ASp. (:snake: hee hee). Iā€™m rereading the articles that Iā€™ve pinned about how-to and have been fondling looking over the fabrics collected so far. My hope is to use only the stash and that which was already purchased for this project and not go gallivanting in fabric stores and sites looking to add in. That would be fun, but also just a form of procrastination. Be brave, little toaster, do the thing.

Advanced studies Friday: diningroom table is covered in stuff for the bunting. Helpful hint: when trying to curb ones crafts spending just go stash diving and see the things you bought 20+ years ago and still havent used.
This is their year! (Maybe.)

Project Name & Page Link: Cashew Milk Quiche
Brief Description: Ever since becoming lactose intolerant, Iā€™ve had a terrible time trying to make quiche. Cashew and almond milk donā€™t react the same way with eggs that dairy milk does. Iā€™ve ended up with quiche that is rubbery; quiche with a terribly soggy bottom, quiche that spills water out all over the place as soon as you cut it. None of which were good. This is the first one Iā€™ve managed that came out perfectly. Crisp pastry, fluffy egg, prefect touch of veggies. I kinda mixed advice from several sources, and have written my version below, but the main inspiration is linked above.

My First Decent Cashew Milk Quiche
1 refrigerated pie crust
8 eggs
1 cup cashew or almond milk
2 ounces shredded Cabot cheddar
1/2 tsp mustard powder
1/2 tsp baking powder
1 diced shallot
1 Roma tomato
2 oz cooked bacon
2-4 T chopped fresh herbs

Pre-bake the pie crust with pie weights, at 425, for 12 minutes. Allow to cool while prepping the rest of the ingredients. Reduce the heat to 350.

Shred the cheddar on a box grater. Dice the shallot and bacon. Slice the tomato thinly.

Whisk the eggs, milk, mustard powder, baking powder, salt & pepper together. Add in the fresh chopped herbs and whisk again.

Pour the egg mixture into the prepared (and cooled) pie crust. Sprinkle on the bacon and cheese, and poke them down into the egg mixture a little. Lay the tomato slices on top.

Bake at 350 for 40-55 minutes, until set, but not overdone.

Finally, let the quiche rest for 15-20 minutes before slicing.
