Project Name: Chickpea Truffles
Brief Description: These truffles were both sweet, and fascinating. I’m in the middle of a “clean out the pantry & random cupboards frenzy”. I found an old can of chickpeas that had fallen off the shelf and out of sight, some black cocoa powder I bought for Ada’s second birthday cake (she’s about to be 4), and a bag of sugar-free/dairy-free/everything-free chocolate chips that I received by accident in an Imperfect Foods order. So I decided to take a gamble on this recipe for Chickpea Truffles. I used my small cookie scoop and made 24 (this is half the batch); which were each the size of a Lindor truffle. The truffle center was great. Light and fluffy, and darkly chocolatey. Not a hint of legume. I topped a few with flaky sea salt. My husband and I both liked them, and I think with a lighter cocoa powder, and a better chocolate chip, they might be really amazing, but I might not make them again. The problem was they almost killed my little 2-cup food processor’s motor. The texture is just soooo thick. If you have a stronger food processor and like dark chocolate, you might love these.

Brief Description: We have a little entryway between our garage and kitchen, that is a bit sad. At Christmas, I used strong magnets to hang a Christmas Tree Wall Quilt that I made back in 2021. I loved how much it cheered the space, and helped deaden sound there, so after I took down the holiday decorations, I decided to make another wall quilt for the space. I wanted something something reminiscent of winter and the wonder of snowflakes, so I used mostly blues and purples.

Project Name: Lemon Curd Cupcakes
Brief Description: More pantry cleanout cooking! I had half a jar of lemon curd in the fridge that was on it’s last few weeks of usability, a lemon cake mix & tub of lemon frosting that have been in the pantry since last spring, and part of a jar of yellow sprinkles leftover from Ada’s 1st birthday (see age note above). So I baked the cupcakes, used a piping bag to fill them with lemon curd, frosted, then added the sprinkles. (This pic was taken before I remembered to add the sprinkles, but Jim & Ada had already grabbed some.) The cake mix did require water to bake.

Project Name: Chocolate Peppermint (Cake Mix) Cookies
Brief Description: I’m trying to clear out a pantry bin of baking mixes and baking chips in my pantry. There were some chips that have been there for 2+ years, and really needed to get used before they go bad. I also had a chocolate cake mix that Walmart substituted in an order for me, and has been sitting around for over a year. So I used up the last half a bag of Andes peppermint crunch chips, and the cake mix, in a batch of Cake Mix Cookies. They were a rich chocolatey brown, with cheerful pops of red & white on top.

Brief Description: The school nurse is helping with running crochet club this year, and she brought in the pattern for these ornaments. I never realized how easy they are to make so I made a couple before Christmas, but never attached anything for hanging them…until today. I used some gold elastic cord that was in a package I received.

Brief Description: At crochet club, the nurse also shared the pattern for a wreath ornament, which was also very easy, but I only got half of one finished before Christmas. I just made the lighter green section and joined them together. I also added the gold elastic cord as the hanger.

Brief Description: I made Plant Labels for the seedlings I started, using Rebelle on my Surface to do the drawing/watercolor, GIMP to apply the text/words, and ran them off on sticker vinyl on my cricut (they’re backed with sticker vinyl as well, so should be water-repellent/reusable). And I made them in a whole rainbow of colors!
